The Finca Son Bosch is embedded between the vineyards of the Bodega Santa Catarina app. 500 m away. The Bodega was built in 1985. In total, Santa Catarina owns vineyards with an area covering 80 hectares of land. Santa Catarina planted his vineyards with noble French and indigenous vines: Red wine is cultivated using Merlot, Cabernet Sauvignon, and the locally grown Manto Negro grape. Whereas, Chardonnay, Sauvignon Blanc and the indigenous Prensal Blanc grape make the white wines.
The vintage begins in August and lasts until the end of September. The vineyards of the Bodega Santa Catarina enjoy the extraordinary microclimate of the Tramuntana-mountains in the Southwest of Mallorca. Mild Mediterranean breezes, intense sunshine, cool nights, and snow in wintertime make excellent quality conditions for the grapes. Pebbles and detritus- developed over millions of years- are the most appropriate components of soil for the wine.
1987 saw the building of the cellar- (40 metres wide and 50 metres deep and made of sandstone)- completed. The red wines age here in 225 l barrels, made of American and French oak for between one and three years. After this time of ripening, the wine is drawn into bottles and stored for between one and five years in the cave, before it is released into the commercial market.
